Ginger Snaps
















The hubby is gone ATV riding and I will have the whole night to myself. He snatched a bag of my cookies and left for several hours. I have a candle lit and lovely music playing. The scent of ginger is wafting through the air. Oh how I wish it were fall! These cookies were yummy; however they were not as snappy as most ginger snaps you buy in the store. They were crispy yet moist. Very good indeed. The first batch got a little too brown for my taste..........as the recipe said to bake for 15 min. Dummy me should have checked at 10.

Ginger Snaps
Ingredients
2 cups flour
1/4 teaspoon salt
2 teaspoons baking soda
1 teaspoon cinnamon
1 teaspoon clove (I omitted)
1 teaspoon ginger
1 cup sugar
3/4 cup butter or margarine
1 egg
1/4 cup molasses
extra sugar, for rolling
Directions
1Sift first six ingredients together.
2Cream sugar and shortening; add egg and molasses.
3Add dry ingredients and mix well.
4Form walnut-sized balls and roll in a little sugar.
5(can refrigerate if a little sticky, or use a bit of flour).
6Place on greased cookie sheet.
7Bake at 350 degrees for about 10 minutes.
